I'm kind of obsessed with making everything from scratch, taco seasoning, marinara sauce, salad dressings, and the list goes on. I'm not crazy though, I totally understand that most people don't have the time to make every element of a meal from scratch!

But 5 minutes for fresh, delicious, homemade salsa, now that's possible! And let's be honest, when it comes to salsa, half of the time I spend almost 5 minutes just trying to get the lid off the jar! Don't laugh, I'm a small girl and those lids are tight.

Jar lid problem be gone! Last week I whipped up this easy salsa recipe to go on top of myQuinoa Crusted Mexican Chicken and the result was so fresh and delicious that I had to share it with all of you!
Ingredients - 3 roma tomatoes
- ¼ cup green pepper (chopped)
- ¼ cup red onion (chopped)
- ¼ cup fresh cilantro
- 1 lime (juiced)
- 1 tsp cumin
- ½ tsp chipotle powder
- ½ tsp salt
- ½ tsp black pepper
Combine all of the ingredients in a food processor.

Blend for 30-60 seconds or until the salsa is to the consistency of your liking. (Less time – more chunky salsa, more time – less chunky salsa.)

Voila! Your salsa is ready to go! Place in the refrigerator covered for up to one week.

Cinco De Mayo is just a little over 2 weeks away! Serve this salsa with a Blackberry Jalapeño Margarita and let the fiesta begin!
