
I decided to switch up this recipe with a little BBQ twist. After all, I was born & raised a southern girl, which means BBQ runs deep in my roots!

which, come on, who doesn't?!) you're going to love this BBQ Chicken Mac & Cheese! The combination of creamy mozzarella cheese with BBQ chicken, all topped off with fresh cilantro, equals winner, winner chicken mac & cheese for dinner

The best thing about this dish, second to it's amazing flavor, is how easy it is! In less than 30 minutes, dinner is on the table… once again, winning!
Ingredients - 12 oz uncooked macaroni noodles
- 8 oz cream cheese
- 1 cup chicken broth
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp black pepper
- ½ tsp kosher salt
- 1 cup mozzarella cheese (shredded)
- 2 cups shredded boneless, skinless chicken breast (boil or pressure cook 1 lb of chicken and shred)
- ½ cup bbq sauce
- 2 tbsp fresh cilantro
Cook the macaroni noodles according to package directions, drain, then set aside. Add the cream cheese and chicken broth to a large pot, and bring to a boil. Whisk until the cheese has melted and the sauce is smooth.

Reduce the heat to medium, and add the onion powder, garlic powder, salt and pepper, combine well, then add the mozzarella cheese.

Stir continuously until the cheese has melted into the sauce, then add the chicken and bbq sauce.

Add the cooked macaroni noodles, stir to combine, then transfer to a serving bowl and top with the cilantro.

Yum, yum, yum! Seriously, just yum!

I'm kind of obsessed with this dish. I'm also kind of obsessed with cheese and pasta, so this makes perfect sense!

Vegetarian Option: Omit the chicken. The cheesy BBQ sauce is so good on its own, you could definitely do it without chicken! Also, use vegetable broth instead of chicken broth. Gluten Free Option: Substitute gluten-free macaroni noodles. Always make sure the chicken broth and BBQ sauce used is gluten-free.
