
The recipe all began when I went to survey my refrigerator before heading out of town. I'm flying to Phoenix tomorrow to visit my besties and meet up with my brother who's in town for a conference from Washington DC (
yay for friends & family time!) After surverying the current fridge situation, I knew that I needed to use chicken breasts and bacon in a recipe before heading out of town. I swooped by Grocery Outlet downtown to get some inspiration on what I wanted to make with the chicken and bacon already in the fridge. I saw a bag of peaches on sale for only $2.49 (
Grocery Outlet prices are up to 60% below conventional retail prices, woo hoo for saving money!) I started thinking about the Grilled Peach Balsamic BBQ Chicken I made a few weeks back, that got me thinking, grilled peaches, BBQ chicken and crispy bacon, yes! I then turned the corner and saw tortillas, and boom, I decided to turn this combination into a scrumptious quesadilla!

Instead of traditional cheddar cheese, I used Cabot Habanero Cheddar (
a personal fav!) to add a little spice to the quesadilla and balance out the sweetness of the peaches and BBQ sauce.

The combination was a winner! So many delicious flavors going on in this quesadilla!
Ingredients - 6 slices bacon
- 1 lb chicken breasts (boneless, skinless)
- 1 cup bbq sauce (divided)
- 2 fresh peaches
- 2 cups cheddar cheese (spicy or traditional – shredded)
- 4 medium flour tortillas
Preheat the oven to 400°. Lay the bacon strips across a baking rack on top of a foil-lined baking sheet. Place in the oven for 20-25 minutes, or until crisp. While the bacon is in the oven, toss the chicken breasts with ½ cup BBQ sauce.

Place the chicken on the grill over medium high heat. Grill for 8-10 minutes per side.

Slice the peaches in half, remove the pit and grill the peaches skin side up for 3-4 minutes.

Once the bacon is cooked, and the chicken and peaches are grilled, peel the skin from the peaches and dice, then dice the bacon and chicken. Combine all of the ingredients in a large bowl with ¼ cup BBQ sauce .

Lay two of the tortillas on a flat surface, cover each tortilla in app.½ cup cheese, then top with the BBQ chicken, bacon and peaches.

Top each quesadilla with another ½ cup of cheese.

Place another tortilla on top and cook in a large skillet over medium high heat for 5-6 minutes per side.

Now you might be asking, "Whitney, how do I flip this giant quesadilla without losing all of the delicious filling?" The best answer is,
very carefully, haha! But seriously, I used a spatula on one side and then my hand on the other side to help it flip over without spilling out all of the goodness!

Once it's carefully flipped and golden brown on both sides, slice it into halves, quarters or triangles, whatever your little heart desires, then either drizzle with the additional ¼ cup BBQ sauce, or serve the sauce on the side for dipping!

Seriously, the crispy, toasty tortilla filled with the sweet BBQ chicken, grilled peaches, crispy, salty bacon and spicy, melty cheddar cheese, my mouth literally just watered while typing that sentence!
