
A simple chicken salad is tossed together in 10 minutes then kicked up a notch with buffalo sauce and pepperoncinis, pair it with a sweet hawaiian roll to make the perfect sweet and spicy slider!

These are great for taking to lunch, as the chicken salad is served cold. Throw a couple of sliders in your lunchbox for a delicious mid-day meal that all of your co-workers will be totally jealous of!
Ingredients - 2 cups chicken breasts (boneless, skinless, cooked and shredded)
- ½ cup pepperoncinis (sliced)
- ½ cup carrots (shredded)
- ½ cup celery (chopped)
- 1 tbsp fresh cilantro
- ¼ cup buffalo sauce
- ¼ cup blue cheese dressing
- 8 hawaiian sweet rolls or slider buns
- ½ cup blue cheese crumbles (optional topping)
Combine the shredded chicken, pepperoncinis, carrots, celery and cilantro in a large bowl.

Pour the buffalo sauce and blue cheese dressing on top. Toss to combine. Spoon the chicken salad onto the rolls or buns, then top with the blue cheese crumbles, if you like… for me, it's a more cheese, yes please situation

Refrigerate any leftover chicken salad. All I can think about right now is how upset I am that I already ate all of the leftovers
