One of my go-to quick & easy weeknight meals is some sort of Asian rice or noodle dish, such as this Quinoa Fried Rice or Gluten Free Kung Pow Beef & Noodle Bowl . They can be tossed together in just a few minutes and are always delicious!

This Thai Beef Noodle Bowl with homemade peanut sauce is no exception to the rule, it's quick, simple & scrumptious!

And the great part about using Asian rice noodles is that it makes the entire dish gluten free!
Ingredients - 1 tbsp olive oil
- 1 lb sirloin (sliced into strips)
- ½ cup thai peanut sauce (click link for recipe)
- 7 oz rice noodles
- 2 tbsp green onions (diced)
Bring a large pot of water to a boil. Cook the rice noodles, 5-6 minutes. Drain and set aside. Heat the olive oil in a large skillet or wok over medium-high heat. Add the steak and cook through, 5-7 minutes.

Add the peanut sauce to the steak and cook 1-2 minutes. Place the noodles in a large bowl, add the peanut beef and top with the green onions.

I also added a few crushed red pepper flakes and crushed peanuts on top for a little kick and a little crunch!

Gluten Free Option: Be sure to use gluten-free soy sauce in the peanut sauce to make this recipe gluten-free.
