This mojito recipe was inspired by my mission to create the perfect cocktail to pair with the Chorizo Tostadas with Watermelon Serrano Salsa I made earlier this week.

Let me just say,
mission accomplished!
Ingredients - 2 (1 inch) cubes fresh watermelon
- 1 small lime (juiced)
- 1 tsp sugar
- 1 tbsp fresh mint leaves
- 3 slices fresh jalapeño (de-seeded)
- 2 oz white rum
- Ice
- 1 cup ginger ale
Add the watermelon, lime juice, sugar, mint and jalapeno to a glass.

Muddle everything together.

Add the rum and ice to the glass. Top with the ginger ale.

Light and refreshing with just a slight kick of spice, the perfect drink for sipping by the pool!

Since I made these in the middle of the afternoon… on a Monday, I made one as the recipe suggests, then I made one without the rum to sip on while I finished the days work. Both were equally delicious! Because there's so much flavor in the mint, watermelon and jalapeño, simply topped with ginger ale, this makes a delicious virgin cocktail, AKA
mocktail!
